Timilia Paccheri produced by the Cooperative of Catenanuova  with timilia durum wheat flour.

A product with a low glycemic index, easily digestible and capable of regulating intestinal functions thanks to its high fiber content.

Bronze-drawn pasta is highly digestible due to the limited processing of the flour. This type of bronze-drawn pasta allows it to be more porous and to maintain the unchanged quality and values of the pasta itself

The slow drying of the pasta itself at low temperature is a fundamental process for the success of the product. In fact, this very slow process (about 60 hours) ensures that the wheat does not lose its vitamin properties, but also its protein content which is significantly higher than the average.

The ridged shape of the pasta, besides being a consequence of the bronze drawing, is also a deliberate choice. All of this ensures that the sauce does not “slide” on the pasta but remains amalgamated until the end.

It’s called ancient Sicilian wheat because during drought periods, it managed to grow and flourish despite the adverse conditions.
